Xmas Wrapup

So the family is gone, the boys are asleep, and I’m much happier with where I’m at then this morning.

After my post this AM, it was time to get ready, prep the food, and go-go-go! 8 pounds of Pork to roast, a new carrot dish to try, and all (and I mean *ALL*) of our local relations on the way. This means a grand total of 3 pre-schoolers, 1 infant, 4 parents, 4 grand parents, and one cousin = 13 people in our house for the holiday.

it was fun, but I now know how lucky I am to have the kids I do. Ray is a model child, even when he’s being a pain in the ass. *grin*

Oh, and if you don’t own a Hamilton Beech electric roaster, buy one. These things are amazing. I cooked 8 lbs of Pork loin in about 2 hours. And if anyone wants the recipe, I’ll put it on later tonight. The carrot/onion/cocoa dish, however, will remain my little secret until next year….
