Spring Yummy

One of my favorite things about Spring and Summer is the abundance of fresh cantaloupe. Some of my favorite memories start with a slice of cantaloupe at my Grandma Linhart’s kitchen table.

This morning I cut up a just-perfectly-ripe cantaloupe, and mixed the chunks with shunks of granny smith and yellow delicious apple, red pear, and bananas.

A little dash of lemon juice, and I have a spring fruit salad that will last me a few days and keep me on the healthier eating thing. If only I had some chopped walnuts it would be perfect.

    My Grandma Bert used to slice the very top off a melon, scoop out the seeds, and fill the inside with red jello. Then she’d bring it out to the table, slice it in front of the kids, and act all surprised at the jello inside this very special melon.

    Might be a good one to try on the boys this weekend :)

    And we looooved it for desert – which doesn’t hurt.
